Chickpea salad recipe
Makes 2 sandwiches
- 1 15-ounce can chickpeas, drained
- Mayonnaise to taste
- 1 tbsp. fresh cilantro or chives
- Salt and pepper to taste
- Bread or pita pockets
- Mash chickpeas in a bowl using a fork or dough cutter.
- Add mayonnaise and seasonings of choice. Mix until the consistency is like chicken salad.
- Put into toasted pita pocket or on bread.
- Add lettuce, tomato, cucumber and/or shredded carrots.
