Black bean mango salad recipe
- 1 can black beans, rinsed and drained
- 1 medium mango, peeled and cubed (or use thawed frozen mango)
- 1 can chopped green chilies
- Fresh juice of 1 lemon or lime
- 1 tsp. olive oil (no more)
- ½–1 tsp. chili powder (if desired)
- Mix together the black beans, mango chunks and green chilies.
- Drizzle olive oil over the top. Add fresh lemon or lime juice. Stir.
- Sprinkle with chili powder, if using.
- Taste to see if more fresh juice or chili powder is needed.
