Black bean mango salad recipe 



  • 1 can black beans, rinsed and drained 
  • 1 medium mango, peeled and cubed (or use thawed frozen mango) 
  • 1 can chopped green chilies 
  • Fresh juice of 1 lemon or lime 
  • 1 tsp. olive oil (no more) 
  • ½1 tsp. chili powder (if desired) 


  1. Mix together the black beans, mango chunks and green chilies.
  2. Drizzle olive oil over the top. Add fresh lemon or lime juice. Stir. 
  3. Sprinkle with chili powder, if using.
  4. Taste to see if more fresh juice or chili powder is needed.
