Chicken meatloaf recipe

Ingredients

  • 2 beaten eggs or ½ cup Egg Beaters® 
  • ¾ cup skim milk 
  • 2/3 cup whole-wheat bread crumbs 
  • ¼ cup finely chopped onion 
  • 2 tbsp. fresh chopped parsley 
  • ½ tsp. dried sage, basil or oregano, crushed 
  • 1 tsp. salt  
  • 1/8 tsp. black pepper 
  • 1½ pounds ground chicken 
  • ½ cup low-sugar ketchup 
  • 1 tbsp. Splenda® Brown Sugar Blend 
  • 1 tsp. ground mustard 

Directions

  1. Combine eggs and milk in a bowl. Stir in the bread crumbs, onion, parsley, sage, and salt and pepper. Add meat and mix well. Lightly pat mixture into an 8x4x2-inch loaf pan. 
  2. Bake in a 350° oven for 1–1¼ hours or until internal temperature registers 160°F.
  3. Combine ketchup, brown sugar blend and mustard in a bowl; spread over meat. Bake for another 10 minutes. 
  4. Let stand for 10 minutes before serving.
