Easy watermelon sandwich recipe

A simple, tasty recipe that kids can make on their own.

Ingredients

  • 4 thin slices of watermelon  
  • 4 tbsp. crumbled goat or feta cheese, or Greek yogurt (regular isn’t thick enough) 

Directions

  1. Put 2 watermelon slices on a plate. 
  2. Cover each with 2 tablespoons of the cheese or yogurt, then top with remaining watermelon slices.
  3. Add a drizzle of balsamic vinaigrette and chopped fresh basil, if desired.
