Pesto chicken or tofu recipe



  • 1 large cooked chicken breast or ½ brick of firm tofu 
  • Pesto 
  • Toasted pita pockets 
  • Salt and pepper to taste 
  • Sliced tomato 


  1. Grill, bake or boil chicken until done. If using tofu, drain on paper towels to remove excess water. 
  2. Cut chicken or tofu into bite-sized pieces and place in a bowl. 
  3. Add enough pesto to coat evenly. 
  4. Place tomato slices into pita pockets. 
  5. Fill with pesto chicken or tofu.

This is also a tasty topping for pizza.
