Pesto chicken or tofu recipe
- 1 large cooked chicken breast or ½ brick of firm tofu
- Toasted pita pockets
- Salt and pepper to taste
- Sliced tomato
- Grill, bake or boil chicken until done. If using tofu, drain on paper towels to remove excess water.
- Cut chicken or tofu into bite-sized pieces and place in a bowl.
- Add enough pesto to coat evenly.
- Place tomato slices into pita pockets.
- Fill with pesto chicken or tofu.
This is also a tasty topping for pizza.
